To make Scottish-style Cullen Skink, you need the following ingredients.

  • 300 grams of smoked haddock fish
  • 3 medium potatoes
  • 400 ml of milk
  • 1 greeting sheet
  • 2 parsley sprigs
  • 2 cloves of garlic
  • Salt and pepper to taste 

How to cook Cullen Skink:

Step 1: Cook the potatoes and mash some of them

Peel the potatoes and then cut them into cubes.  Bring the water to a boil and then cook the potatoes until soft, about 10 minutes.

Those of you who like the texture of thick broth can mash some of the potatoes, if you want a more instant method you can use potato flour instead.

Step 2: Cook the smoked fish, then remove the skin and bones

In a casserole, add the smoked haddock pieces, milk, parsley, and bay leaves.  Cook for about 5-10 minutes until the fish is slightly soft.

Remove the skin and bones from the cooked fish. After that, cut the haddock into cubes and shred some so that the texture of the fish is more flavorful in the broth.

Step 3: Make a creamy broth with the potato mixture

The milk broth from cooking the fish is then separated from the bay leaves and parsley by filtering it.

Saute garlic until fragrant, and add potatoes.  Put the stir fry into the fish broth.  Next, cook the broth mixture for about 5 minutes, stirring thoroughly to prevent the broth from clumping. Add salt and pepper to enrich the taste.

Step 4: Serve the Cullen Skink
