Bun Rieu, Vietnamese Crab and Tomato Noodle Soup Recipe

Being one of the foods that are loved with a tempting chewy texture.  Noodles are considered a simple dish that you can enjoy at any time.

There are many types of noodles with flavors that can spoil your tongue, one of which is Bún Riêu from Vietnam. Bun Rieu is crab noodles with bright red tomato soup.  Looks very interesting to enjoy.

The bun itself means rice vermicelli and Rieu means crab paste or meat/crab balls.  There are several varieties of bún riêu, including bún riêu cup (minced crab), bún riêu cá (fish), and bún riêu ốc (snail).

Ingredients:

In making bun rieu, you only need the following ingredients!

The main ingredient:
  • 1 pack of vermicelli
  • 1 medium crab, cut
  • 200 gr shrimp
  • 2 blocks tofu
  • 5 pieces of shrimp/meatballs
  • Bean sprouts
  • The oil for frying 

Soup ingredients:
  • 6 medium tomatoes, diced
  • 5 raw onions, sliced
  • 2 cloves of garlic, chopped
  • 5 bird's eye chilies, medium cut
  • 2 stalks of spring onions, chopped
  • 5 stalks of celery, sliced
  • 3 tbsp olive oil or coconut oil
  • 1/2 tsp mushroom stock
  • 1 liter of chicken stock
  • 1/2 tbsp soy sauce
  • Salt and pepper to taste 

Steps:

Step 1: Fry the tofu until the skin is slightly crispy
You have to dice the tofu to a rather small size, about 2-3 cm square.  Put the pieces of tofu into a pan filled with hot oil then fry until the surface of the tofu is browned and slightly crispy.

Step 2: Cook vermicelli until soft
Boil sufficient water in a cauldron, then add vermicelli, and cook for about 2 minutes until chewy.  Remove the vermicelli, drain and then put it in cold water so that the vermicelli doesn't get soggy and crumble later.

Step 3: Make the soup
Saute shallots, garlic, chilies, and tomatoes.  Sauté gently until the tomatoes are slightly crushed.  Put the crab and shrimp pieces along with the water into the cooking cauldron until the crabs are almost cooked.  Add seasonings such as mushroom broth, salt, pepper, soy sauce, green onions, and celery leaves.  Taste correction.

Step 4: Serve Bun Rieu
Put the vermicelli into a bowl, add the meatballs, bean sprouts and tofu then drizzle with the tomato sauce.  Top with shrimps and crab sticks.
