Those of you who like to snack in your spare time can try lemon bars, the process which are not too difficult is also suitable for those of you who want to be creative in the kitchen but don't want to waste a lot of time.

Can be used as a dessert on holidays, and you can make buttery and crispy Lemon Bars.  Curd from a fresh lemon also enriches the taste of Lemon Bars.

Lemon bars are suitable to be enjoyed in cold conditions when the weather is hot.  Because lemon bars can be stored for several days in the fridge, you don't have to bother making them every day.

Ingredients:

Crust:
 300 gr of flour
 66 gr powdered sugar
 12 tbsp unsalted butter
 1/2 tsp salt 

Filling (lemon curd)
 60 gr flour
 8 eggs
 600 grams of powdered sugar
 240 ml of lemon juice
 3 tbsp grated lemon zest 

How to cook:

Step 1: Make the crust dough

Make skin dough by mixing sifted flour, sugar, and salt, and pour melted butter.  Stir using a mixer until the texture is like wet sand.

Pour the mixture into the cake pan, press and flatten, then bake at around 175°C for 20 minutes.

Step 2: Make lemon curd

Make the curd by mixing the sugar and grated lemon zest, flour, eggs, and lemon juimixingixer until everything is well blended and the sugar has melted, no need for it to expand and thicken.

Step 3: Make lemon bars

Pour the lemon curd over the baked zest, then place it back in the oven for about 10-20 minutes.  Leave the lemon bars to cool slightly then cut them into pieces.  After that, sprinkle the lemon bars with powdered sugar as a topping.

Tips & Tricks:

  1. The use of a cake pan (baking dish) will be very influential, a stainless pan will cook more easily than glass, so add about 5 minutes of baking time if using a glass pan.
  2. Let the lemon bars rest for about 30 minutes until they reach room temperature so they don't break or stick when cut because the texture is still wet after baking.
  3. For storage, you can put the lemon bars in the fridge to enjoy a few days later, or in the freezer for longer storage, around 1 month.
  4. Don't sprinkle the lemon bars with powdered sugar if you want to store them in the refrigerator, just sprinkle them after you want to enjoy them.
