Harcha Semolina, Moroccan Pan-Bread Recipe

The name of Morocco has skyrocketed after successfully overthrowing the pre-giant team in this year's world cup.  For Morocco, this is a very impressive breakthrough.  The breakthrough made by Morocco seemed to have never been anticipated by other teams until the end of Morocco, for the first time advancing to the semifinals to fight for the world cup title in 2022.

Getting to know the country in the northern part of North Africa can't be separated from its culinary delights which are unique and worth tasting, one of which is the harcha pan-bread.

This harcha is made from semolina and served as a dessert, you can also enjoy it as a great snack for the upcoming world cup semifinals. You can see the full recipe below, check it out!

Ingredients:

In making a Moroccan Harcha you need the ingredients below.

  • 3 cups fine semolina 
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 10 tbsp melted butter (unsalted)
  • 250 ml of milk
  • 1/2 cup coarse semolina

How to cook:

Step 1. Make the dough
Mix sugar, baking powder, salt, butter, and fine semolina, and stir thoroughly.  You can mix this dough using your hands or a spoon.
Pour the milk into the dough, and knead the ingredients until smooth with a slightly wet but dense texture.  Let the dough rest for about 10-15 minutes.

Step 2: Shape the dough
Take about a handful and shape it into a ball.  Next, coat all surfaces of the dough balls with coarse semolina and then flatten them with a thickness of about 0.5 cm.

Step 3: Fry the dough until golden brown
Pour some oil into the pan, add the dough that has been flattened, and fry until the surface is slightly browned about 3-5 minutes. Flip the dough so that it cooks evenly with the same brownish color.

Apart from frying, you can also bake the semolina dough in the oven at around 180°C for a few minutes. But before that, keep the dough in the freezer for a while.

Step 4: Serve the Harcha cake
Generally, Harcha can be eaten with your favorite butter, cheese, or jam.  Apart from that, you can also eat it with tea or coffee to keep you awake while watching the world cup.
