Blåbärssoppa, Swedish Blueberry Soup with a Beautiful Look!

Fruit soup is a very common preparation in Sweden, of the several types of fruit soup, blabarssoppa is quite popular.  Blabarssoppa is often served at the Vasaloppet ski race in Sweden.

This blabarssoppa looks beautiful with its purplish black color, not only that blabarsoppa also has an interesting secret taste.  If you want to enjoy a typical Swedish blabarssoppa delicacy, you can see the full recipe below.

Ingredients:

  •  3 cups blueberries (fresh or frozen)
  •  1 tbsp orange juice
  •  1/2 tsp cinnamon powder
  •  1/2 tsp cardamom
  •  1 tbsp sugar
  •  1 tbsp cornstarch + 1 tbsp water
  •  2.5 cups of water
  •  2 tbsp Greek yogurt or whipped cream
  •  Pistachios to taste (optional)
  •  Granola to taste (optional)

How to make:

Step 1: Bring the blueberries to a boil 

Place the blueberries in a pot, add water and then heat over low heat.  Cook until the water boils about 5 minutes.  If using frozen blueberries, make sure to cook longer and stir occasionally so that the inside of the blueberries doesn't freeze anymore.

Step 2: Add cornstarch and flavoring 

Pour the cornstarch solution slowly while stirring so there are no lumps. Add cinnamon powder, cardamom, lemon juice, and granulated sugar to make the soup sweeter and more flavorful.  

Step 3: Cook the blabarsoppa again until slightly thick

Place the pot of soup back on the stove over medium-low heat until the sugar dissolves and the other ingredients combine with the soup.  Cook for another 2 minutes until you get the texture and flavor of the soup you want.

Step 4: Serve blabarsoppa with toppings

Pour the soup directly into the serving bowl to enjoy it immediately while it's warm.  You can also store it in the refrigerator to enjoy it cold. Add Greek yogurt or whipped cream on top of the ready-to-eat blabarsoppa soup.  After that, drizzle with chopped pistachio nuts and granola granules.

Now you can enjoy sweet and slightly sour blabarsoppa, of course, the combination of the two flavors makes this soup fresher in the mouth.  Don't forget the added notes of cardamom and cinnamon which can make this blabarsoppa even more aromatic.
