Chicken Kiev Recipe (Crispy Chicken Breast with Butter Herb Stuffing)

Chicken Kiev, from its name, looks like a city in Ukraine, Kyiv.  This food is indeed famous in that country, but some sources say that this chicken kiev comes from Russia. On the other hand, the original chicken Kiev recipe allegedly came from France.

The long history of chicken kiev has made this food one of the most popular dishes in Europe.  Made from chicken breast rolls covered in breadcrumbs stuffed with herb butter, it certainly gives a very interesting taste. Ingredients:

  •  4 pieces of chicken breast
  •  6 tbsp butter (unsalted)
  •  3 cloves of garlic, chopped
  •  15 parsley or celery sprigs, chopped
  •  1 cup flour
  •  1 cup bread flour
  •  4 eggs
  •  Salt and pepper to taste
  •  Oil to taste

How to make:

Step 1:

Make the filling, shape, and freeze: mix the butter, parsley, grated garlic, and salt.  Stir all ingredients thoroughly.

Form the filling, put some of the butter mixtures on top of the plastic wrap, and shape like an oval with a smaller size than the existing chicken breast.  Wrap the butter mixture then let sit in the freezer to freeze for about 30 minutes.  Make into 4 parts of the mixture.

Step 2:

Pound and seasoning chicken: cut the chicken breast into two parts but don't let the two ends cut off.  Make sure you choose a chicken breast with a large size so that it is easy to shape later.

Mash the chicken breast with a meat tenderizer or other mashing tool, and mash it from both sides of the meat. Sprinkle the entire surface of the meat with salt and pepper to taste.

Step 3:

Stuff, roll up, and freeze chicken: put the chicken on top of the plastic wrap, then put each piece of butter over the chicken breast.  Roll the meat with the filling, and fold the sides of the chicken that is not filled in half so that the filling does not come out later.  Wrap the chicken breast rolls in plastic wrap quite tightly, and place in the freezer for about 30 minutes.

Step 4:

Crumb and fry: coat the surface of the chicken roll with flour, then the egg, and finally the breadcrumbs.  After that, fry until brown.

The outside that looks brown doesn't guarantee that the inside is cooked, for that, you have to bake it again in the oven at 65°C for about 15 minutes.  After that, you can enjoy chicken kiev which is crispy on the outside and juicy on the inside.
