Ingredients:

  • 1 banana
  • 1 cup of coconut milk
  • 1 egg
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1-2 drops of vanilla
  • 1-2 tablespoons of olive oil or cooking oil
  • 1-2 tbsp margarin
  • 1-2 tbsp vegan banana ice cream (topping)
  • Dragon fruit pieces (topping)

How to cook:

Step 1: Make the batter
Blend the bananas with the coconut milk, then add the flour, baking powder, cinnamon powder, vanilla, salt, and olive oil.

Step 2: Bake the batter on the pan
Melt the butter on the pan, pour about 1/3 cup of the mixture onto the pan, and fry until cooked and the surface is slightly browned.  Don't forget to go back and forth.

Step 3: Serve the banana pancakes
Arrange the pancakes on a flat container, top them with ice cream and dragon fruit pieces and it's ready to be enjoyed.  You can change the topping according to your taste.
