Saray Lokumu, Turkish Delight Rolls Recipe

Saray Lokumu comes from two words namely saray means palace and lokumu or lokum comes from the Arabic "al-halkum" or "rat al-ulqm" which means soothing the throat.

Talking about lokum, this snack is also known as Turkish delight with a chewy texture because it is made from flour dough with milk which is colored and has various flavors, usually having a fruity taste.

Quite different from Turkish delight in general which is shaped like a jelly candy cube, saray lokumu comes with several layers consisting of chewy dough, cream, and additional filling in the form of nuts or jam.  In terms of shape, saray lokum is presented in very interesting rolls.

Ingredients:

Dough ingredients:

  •  1 liter of full-cream milk
  •  1 cup flour
  •  12 tbsp sugar
  •  4 tbsp butter
  •  2 tsp vanilla

Cream Ingredients:

  • 1 cup whipping cream
  • 2 tbsp sugar 
  • 1 tsp vanilla

Additional ingredients:

  • 1 cup of grated desiccated coconut 
  • 1 cup walnuts or almonds

How to cook:

Step 1: Spread the grated coconut on the cake tray

Prepare a tray or cake tin whose walls are not too high, just about 5 cm.  Sprinkle the surface of the tray with grated coconut.

Step 2: Make the cake dough then chill it

Mix milk, flour, and sugar in a medium saucepan.  Stir all ingredients using a balloon whisk until homogeneous.  Heat the mixture over medium-low heat until slightly thick, stirring constantly.  Add butter and vanilla flavoring, and keep stirring the ingredients until completely mixed.

Pour the mixture over the layer of grated coconut in the cake tin and then flatten it using a spatula.  Refrigerate for about 4 hours.

Step 3: Make whipped cream

Enter the whipping cream and granulated sugar into the mixing bowl. Beat the two ingredients until fluffy and stiff.  Add vanilla flavor and stir evenly using a spatula.

Step 4: Layer and roll the cake

Spread the cooled cake dough with whipped cream evenly over the entire surface.  Cut the cakes about 15 cm long and 7 cm wide.  Sprinkle chopped walnuts on each piece and then roll it up.

Top with chopped walnuts on each saray lokumu rolls to make it look more attractive.

Saray Lokumu is also known as Sultan Lokumu. It can be served as a dessert or companion menu when relaxing with families.
